How many times have we dreamed of being able to travel back in time to visit past eras and breathe the atmosphere of the old days? In Bovolone, in the province of Verona, this dream can come true, thanks to a bar that embraces originality without giving up tradition. The secret of this success is told by Paolo, who, along with his wife Marisa, manages the ancient bar Brunello, facing not a few challenges and many satisfactions. 

 

How long has bar Brunello been open?

In fact, bar Brunello has a long history behind it. It was first opened 100 years ago and has always been run by Marisa's family, my wife. It has been passed down for four generations, and now she is the owner. 

What are the biggest challenges of managing a bar like yours?

The biggest challenge is probably the hours. We open at 7:00 and close at 19:00, so it is very demanding to provide service all day, especially when dealing with rude customers. Rudeness is perhaps an even greater challenge.

And what are the satisfactions that motivate you to continue, despite everything?

Well, certainly the greatest satisfaction comes from the customers; in particular, I am pleased when customers come from outside the city just to get the ginseng without sugar or our nocciolino.

How would you describe the customers of bar Brunello?

They are adults, workers, and retirees; we don't have many young people, and this also depends on the hours we operate. Mostly, however, they are loyal customers.

Would you say that nocciolino is the customers' favorite product?

Yes, we are often told that it is the best in the area. And then it is a special product, not found everywhere. We also like it a lot.

 

 

Are there other PAUSA products that you have integrated into the venue?

Yes, in addition to the nocciolino and ginseng, we also have teas, herbal teas, and infusions. Our favorite product is perhaps the berry infusion.

Would you recommend PAUSA products to other baristas?

Yes, of course, we like them a lot, but I wouldn't recommend them to the baristas in our area.

Do you have any other advice for those who would like to open a bar?

I don't know, it's very difficult, it's an important investment that involves many expenses, so you have to think carefully. But if someone has a good idea and proposes something original, why not give it a try? At that point, I would recommend targeting a young audience.

What are your plans for the future?

Our plans for the future? I don't know, maybe leaving the bar to the next generation and enjoying free time with my wife and family. Until then, however, we will continue to do our best to ensure that customers receive the quality they seek and have come to expect at our bar.
